Tricolore Triple

INGREDIENT­S (Serves 4)

◆ 60g butter, softened ◆ 12 slices, bloomer, sourdough, boule or quality white bread of your choice 1 avocado 1tbsp lemon juice 50g watercress 150g turkey breast slices ◆ 12 basil leaves, plus extra to garnish ◆ 200g mozzarella cheese ◆ 4tbsp cranberry sauce ◆ 80g pastrami ◆ 4 small tomatoes, sliced

1 Spread the butter over one side of each of the bread slices. Cut the avocado in half, remove the stone, peel and cut into slices. Toss the slices in lemon juice. Arrange the watercress on the buttered side of four slices of bread and top with the avocado, sliced turkey and basil leaves. 2 Cut the mozzarella into slices and place on top of the basil leaves. Spread the buttered side of four slices of bread with the cranberry sauce and place on top of the mozzarella. Add the pastrami and tomato slices. 3 Top with the final slices of bread, buttered side down. Secure with cocktail sticks if you wish. Serve whole or cut in half, as desired.
