Spicy Fruit And Nut Lamb Balls

INGREDIENT­S (Serves 4)

◆ 400g lean lamb mince

◆ 25g pine nuts, toasted and chopped

◆ 50g soft dried apricots, finely chopped

◆ 2tsp Moroccan seasoning

◆ 15g fresh coriander, chopped

◆ Salt

Put all the ingredient­s in a bowl and mix well together. Form into 20 small meatballs. Cover and chill for 30min. 2

Preheat the grill to medium/hot. Arrange the meatballs on the grill rack and cook, turning for 7-8min until golden and cooked through. Drain and serve with salad, lemon wedges and pomegranat­e seeds.
