PROSCIUTTO WRAPPED ASPARAGUS SPEARS
INGREDIENTS (Makes 12)
◆ 6 slices prosciutto
◆ 12 asparagus spears
◆ 1tbsp olive oil
◆ Parmesan cheese shavings and grated lemon zest, to garnish
◆ Freshly ground black pepper
1 Preheat the oven to 200°C/180°Fan/Gas 6. Cut the prosciutto slices in half lengthways and wrap one piece around the centre of each asparagus spear.
2 Place on a baking tray and drizzle olive oil over the tips and ends, avoiding the prosciutto. Season with freshly ground black pepper.
3 Cook in the oven for 8-10min, until asparagus is tender. Serve warm topped with Parmesan cheese shavings and lemon zest and sprinkled with black pepper.
