MOZZARELLA & TOMATO CROSTINI

INGREDIENT­S (Makes 8)

◆ 8x1cm slices day-old crusty bread

◆ 1tbsp olive oil

◆ 1 garlic clove, peeled and cut in half

◆ 100ml guacamole

◆ Handful of rocket leaves

◆ 12 baby mozzarella balls sliced into 2

◆ 12 cherry tomatoes, halved or quartered

◆ Basil leaves, to garnish

◆ Balsamic vinegar and olive oil, to drizzle

◆ Freshly ground black pepper, to serve

1 Preheat the oven to 180°C/160°Fan/ Gas 4. Place the bread slices on a baking sheet, brush with olive oil and bake for 15min. Rub the bread with garlic and leave to cool.

2 Spread the guacamole on each slice. Top with a few rocket leaves, mozzarella and tomatoes. Garnish with a basil leaf and drizzle with balsamic vinegar and olive oil, if wished. Sprinkle with a little black pepper and serve.
