Chocolate Coconut Booster Bars
INGREDIENTS (Makes 14)
150 CALORIES PER PORTION
◆ 350g soft pitted dates, chopped
◆ 60g whole almonds, chopped
◆ 60g desiccated coconut
◆ 30g crispy rice cereal
◆ 100g bar 90% cocoa chocolate, melted

Put all the ingredients, except the chocolate, in a food processor and blitz in short bursts until well blended and crumbly.

Transfer to a bowl and mix in the chocolate thoroughly. Press firmly in a lined 18cm square tin to compact the mixture. Chill for at least 2hr.

To ser ve, remove from the tin and parchment. Slice into 14 bars. Sprinkle with extra coconut if liked. Store well wrapped in the fridge for up to 2 weeks or freeze.
