Spicy Peas & Len ntils

◆ 400g can chickpeas, drained

◆ 390g can green lentils, drained

◆ 2tbsp vegetable oil

◆ 4tsp your favourite curry powde r

◆ 1tsp salt

◆ 100g unsalted cashew nuts

◆ 100g golden raisins or sultanas

◆ 1tsp chilli flakes, optional

Preheat the oven to 150°C, Fan Oven 130°130CC, Gas Mark 2. Dr y the chickpeas and lentils thoroughly on kitchen paper.

Place in a bowl and toss in the oil, curry powder and salt. Spread over a large lined baking tray and bake for 1hr, turning occasional­ly. Mix in the cashews and continue to cook for a further 30min.

Leaving the peas and nuts on the tray, mix in the raisins and chilli flakes, if using, then leave ever ything to cool. Store in an airtight container for up to 2 weeks.
