TORTILLA PIZZA PIES

INGREDIENT­S (Makes 8)

◆ 2 large soft flour tortillas

◆ 100g pizza sauce

◆ 100g frozen peppers, defrosted and chopped

◆ 50g pepperoni, chopped

◆ 50g mature Cheddar cheese, grated

◆ 1 large egg, beaten

◆ 100ml whole milk

◆ 40g pitted black olives, sliced

1 Preheat the oven to 180°C, Fan Oven 160°C, Gas Mark 4. Grease 8 cupcake tins. Cut out 4 x 10cm circles from each tortilla using a cookie cutter, and carefully fold and press into the tins to form cases.

2 Mix the pizza sauce, peppers and pepperoni together and spoon into the cases. Sprinkle over the cheese. Mix the egg and milk and pour on top. Sprinkle with olives.

3 Bake for about 25min until set. Cool for 15min to firm up before loosening with a knife to remove from the tins. Cool on a wire rack. Chill before packing and ser ve with fresh basil, olives and salad.
