Cucumber & Mint Raita
(Serves 4)
Place 200ml plain yogurt in a bowl, add 10cm piece cucumber, finely diced, 2tbsp fresh mint, chopped,
1 small red onion, chopped, 1 green chilli, finely chopped, 3tbsp pomegranate seeds and 1tsp chaat masala and mix together. Season with salt and freshly ground black pepper and chill for 30min before ser ving.
