Mega Welsh Rarebit With Spinach & Tomato

INGREDIENT­S (Serves 2)

◆ 30g butter, softened

◆ 100g mature Cheddar cheese, grated

◆ 1tsp wholegrain mustard

◆ 1tsp Worcesters­hire

sauce

◆ 100g young spinach

◆ 4 thick slices sourdough

or rustic-style bread

◆ 2 tomatoes, sliced

◆ A few radishes, sliced

◆ 1 small red onion, finely

sliced

◆ Few drops of vinegar

Mix together the softened butter, cheese, mustard and Worcesters­hire sauce. 2

Cook the spinach in a tiny amount of water until wilted. Drain, squeezing out the excess moisture with the back of a spoon or your hands. 3

Preheat the grill. Lightly toast the slices of bread on both sides. Spread half the cheese mixture over 2 slices of bread. Grill until browned and bubbling. Top with the spinach and sliced tomatoes, then place the remainingg slices of bread on top. Spread with the remaining cheese mixture, then grrill again until bubbling and browned. 4 Mix the radishes and red onionn with a few drops of vinegar andd add a little salt and pepper. Serve with the rarebits. MW
