I’ve been a student of gumbo for more than two decades, and even wrote a book on the subject. Many of the chefs mentioned in my piece, including Frank Brigtsen, Slade Rushing and Leah Chase, have been excellent teachers — I’ve pored over their cookbooks, eaten their gumbos and peppered them with questions.
