The ploughman’s lunch as we know it today first became popular in the 1960s, when the Milk Marketing Board pushed it as an attempt to increase national cheese sales. Said to have originated in the Venezuelan town of Los Teques, and sometimes known as ‘deditos de queso’, these salty cheese sticks are wrapped in dough and then baked or fried in oil. They’re also popular in Spain, and at the family-run Venezuelan restaurant El Rincón de la Abuela Venezolana in Barcelona, they also offer coeliac-friendly versions made with cornflour or plantain, and a tofu-filled option for vegans. The classic Philly cheesestea­k is a long roll stuffed with sliced or chopped beef that’s been freshly sautéed or griddled, melted Cheez Whiz, provolone or American cheese and, optionally, caramelise­d onions. POUTINE

This comforting dish originated in Quebec in the 1950s, but it’s popularity has since spread. In its purist form, it’s a combinatio­n of salty cheese curds and rich gravy on French fries, although these days it gets loaded with just about anything. At Liverpool’s Caribou Poutine, you can either stick to tradition, or garnish with toppings such as fried chicken coated in maple syrup or pulled pork with jalapeños and sour cream. RACLETTE Château de Villa, Valais

Legend has it that a winemaker from the Swiss canton of Valais invented raclette one evening after heating a piece of cheese on his wood fire. Today, the cheese dairies here produce raclette cheese, which has protected designatio­n of origin, from local raw milk, according to an ancestral recipe. At the 16th-century Château de Villa in Sierre, raclette is presented as a tasting of five Valais cheeses served with potatoes, gherkins and pickled onions. ADJARULI KHACHAPURI Little Georgia, London

This version of khachapuri, Georgia’s leavened cheese bread, hails from the Autonomous Republic of Adjara, on the coast of the Black Sea. Open-faced and boat-shaped, it’s filled with a combinatio­n of curds and cheeses and baked with an egg on top.
