In the silver-green olive groves brushing the foot of Caldana’s hills, this ecoconscious mill is the brainchild of Paolo Sabatini, who’s passionate about the land and its outstanding extra-virgin olive oil. Olives harvested at groves within a 30-mile radius of the mill are processed within 48 hours to retain maximum flavour, and the oil is extracted using renewable energy. The mill also sells aromatic oils infused with truffle, red pepper, oregano and rosemary.
