In the silver-green olive groves brushing the foot of Caldana’s hills, this ecoconscious mill is the brainchild of Paolo Sabatini, who’s passionate about the land and its outstanding extra-virgin olive oil. Olives harvested at groves within a 30-mile radius of the mill are processed within 48 hours to retain maximum flavour, and the oil is extracted using renewable energy.
