CHEF JAMES’ LIFELONG PASSION PROJECT NOW AVAILABLE ALL ACROSS THE UK

A NOTTINGHAM company has made the dream of an acclaimed London chef come true.

Chef James Cochran has teamed up with Sauce Shop to bring his signature Scotch Bonnet Jam to the masses.

The first batch on the website sold out within hours but spicy jam lovers needn’t worry – there’s now more online to meet demand.

From learning to cook in his mum’s kitchen to using it on his winning Great British Menu dish on the BBC TV show, James’ hot jam, using charred scotch bonnet peppers, red chillies and tomato, has been a lifetime in the making.

Named after his restaurant 12:51 in Islington, London, the Scotch Bonnet Jam can be used in different ways – for dipping, as a glaze or a marinade, in a sandwich or on pizza.

James, who previously worked at the world-renowned two-michelinst­arred The Ledbury, also runs Around the Cluck offering a gourmet twist on the classic fried chicken takeaway.

He said: “This is a true passion project. Sharing my Scotch Bonnet Jam with people has been a dream of mine for such a long time.

“It’s played a major part in my food journey, ever since I was a little kid learning about Caribbean cuisine with my mum. I’ve had it on every menu I’ve ever done. To finally be able to make my dreams a reality with Sauce Shop feels amazing.”

Sauce Shop – creator of the infamous Brussels sprout ketchup – was founded by Pam and James Digva in West Bridgford in 2014. They sold the first batch at a freezing cold farmer’s market.

Today, sauces are manufactur­ed at a factory in Centurion Way, Nottingham, and sold across the UK in Sainsbury’s, the Co-op, delis, farm shops and high-end London store Harvey Nichols.

Pam said: “Working with James and the team at 12:51 has been so much fun. We’ve always been massive fans of James’s food, so it feels pretty special to be making his signature Scotch Bonnet Jam in our factory! It’s also hands-down the tastiest chilli jam we’ve ever eaten.”
