YOU WILL NEED:

250g raw frozen prawns, de­frosted

250g pouch Mer­chant Gourmet Span­ish-style Grains & Rice 125ml white wine 125ml chicken stock 120g frozen peas, de­frosted

150g cherry toma­toes, cut in half

90g green olives

1 lemon, cut into wedges 1

Pre­heat the grill. Place the prawns on the grill pan and grill for 2-3 mins on each side, un­til just pink all over and prop­erly cooked through. Re­move and al­low to cool.

In a large fry­ing pan, heat the grains and rice with white wine, chicken stock and peas. Cook over a high heat un­til just boil­ing.

Take the pan off the heat and al­low it to stand for a few min­utes to cool – the rice will ab­sorb the wine and stock. Stir in the cooked prawns, cherry toma­toes and olives, and top with the lemon wedges.
