Tasty fish pie that’s great for the mind and the mood
APPARENTLY boiled or baked fish eaten weekly is great for boosting our mood and brain power and here’s a healthy recipe that may just become a firm favourite, always choose responsibly sourced fish where possible.
300g Smoked Cod or alternative
200g Giant Prawns without shell
300ml Semi-Skimmed Milk
½ Sliced Lemon
1 Bay Leaf
50g + 50g Butter
25g Plain Flour
100g Button Mushrooms
100g Chopped Spinach
900g Peeled Potatoes Milk and Butter for Mashing
2 Tomatoes, Sliced
50g Grated Cheddar You will need a 10” X 7” Heatproof Dish. Pre-heat oven to 170c
Boil the potatoes seasoning half way, drain and mash with the butter when soft.
Place smoked fish, skin side down, in a shallow frying pan, add the milk, spinach, bay leaf and lemon slices, and simmer. Add the prawns and gently poach for 5 minutes before removing with the fish and setting aside. Reserve the milk mix but discard the bay leaf, lemon and any bones.
Melt 50g of butter in a small pan, stir in the flour, and cook gently. Add the milk residue and gently simmer.
Meanwhile, sauté the mushrooms in the remaining 50g of butter for 3mins and season. Add all the ingredients together, including the sauce, into the heatproof dish.
Allow to cool before topping with the creamy mashed potato. Top the perimeter of the mash with the sliced tomato and cover with grated cheese. Bake in the oven for 20-25 minutes until slightly golden. Serve Hot and Enjoy!
