This is such a re­fresh­ing way to serve Brus­sels sprouts, which are so de­li­cious in a salad. It does take a bit of time to peel off the petals, but you can get this done a day ahead and store them in a bowl cov­ered with damp kitchen paper in the fridge. I swap out the kale some­times with green salad leaves like cos, rocket and wa­ter­cress.
