● 3 pears (I use Conference)
● 6 fresh red chillies
● 10g fresh rosemary sprigs
● 2 tbsp olive oil
● 6 x 250–300g pork chops
● Sea salt and freshly ground black pepper
● Vegetable oil, for frying
