PEANUT BUTTER BANANA BREAD
● 50g butter
● 330–350g blackened bananas (peeled weight), plus 1 spare for decoration
● 120g crunchy peanut butter
● 220g plain flour
● 80g caster sugar
● 100g soft light brown sugar
● 3 tsp baking powder
● ½ tsp sea salt
● 2 eggs
● 30g salted peanuts
● 900g loaf pan, greased and lined with parchment paper
Preheat the oven to 180°C fan/200°c/400°f/gas 6
1. Melt the butter in a small pan over a medium heat, then remove from the heat. Add the bananas to a bowl and mash well to break down. Add the peanut butter and melted butter to the banana bowl and mix well to combine.
2. In a separate, large bowl, add the flour, sugars, baking powder and sea salt. I usually don’t bother with sifting, but it’s worth doing here
