Festive Winter Coleslaw

100g pistachios, plus extra to garnish ½ white cabbage ½ red cabbage 150g Brussels sprouts 100g watercress 3 oranges 50g pomegranate seeds For the dressing: 3tbsp rapeseed oil 1tsp runny honey 1-2tbsp sherry vinegar 1 Gently toast the pistachios in a dry frying pan until lightly charred, then set aside to cool.
2 thinly slice the white cabbage, red cabbage and brussels sprouts. add to a large sealable box to collect any juice. add the watercress, removing any woody stems. seal and chill for up to one day. 3 Gently segment the oranges over a sealable box to collect juice. add the segments to the box. seal and chill for up to one day. 4 to serve, add the orange segments and 100g of pistachios to the salad. combine the dressing ingredients with the orange juice, seal and shake to mix. pour over the salad and toss. serve sprinkled with the extra pistachios and pomegranate seeds.
