Cosy up with these big bowls of goodness Warming butternut soup
Serves 4 Prep: 15 min Cook: 35 min
1tbsp olive oil Pinch of paprika 1 garlic clove, crushed 1 medium red chilli, chopped 1 red onion, chopped 700g peeled and chopped butternut squash 400ml vegetable stock 150g chorizo 125g Greek yogurt ■ ■ Black pepper, to season ■ ■ 3tbsp chopped coriander 1 heat the olive oil and combine the paprika, crushed garlic, chopped chilli and red onion in a large saucepan for 3-4 min. add the chopped butternut squash and stir for another 2-3 min. 2 pour in the vegetable stock and bring to the boil. allow the ingredients to simmer on a low heat for 15-20 min, or until the squash is tender. Remove from the heat and blend in a food processor or with a hand blender until smooth. 3 chop the chorizo and fry in a pan for 1-2 min, until golden, then add to the soup pan along with the soup and the greek yogurt. simmer for 2-3 min. 4 season with pepper to taste, transfer to 4 bowls and sprinkle over the coriander.
