Cosy up with these big bowls of good­ness Warm­ing but­ter­nut soup

Serves 4 Prep: 15 min Cook: 35 min

1tbsp olive oil Pinch of pa­prika 1 gar­lic clove, crushed 1 medium red chilli, chopped 1 red onion, chopped 700g peeled and chopped but­ter­nut squash 400ml veg­etable stock 150g chorizo 125g Greek yo­gurt ■ ■ Black pep­per, to sea­son ■ ■ 3tbsp chopped co­rian­der 1 heat the olive oil and com­bine the pa­prika, crushed gar­lic, chopped chilli and red onion in a large saucepan for 3-4 min. add the chopped but­ter­nut squash and stir for an­other 2-3 min. 2 pour in the veg­etable stock and bring to the boil. al­low the in­gre­di­ents to sim­mer on a low heat for 15-20 min, or un­til the squash is ten­der. Re­move from the heat and blend in a food pro­ces­sor or with a hand blender un­til smooth. 3 chop the chorizo and fry in a pan for 1-2 min, un­til golden, then add to the soup pan along with the soup and the greek yo­gurt. sim­mer for 2-3 min. 4 sea­son with pep­per to taste, trans­fer to 4 bowls and sprin­kle over the co­rian­der.
