Cran­berry and ap­ple sauce

Serves 6 Prep: 15 min Cook: 20 min

Pick Me Up! - - TWISTED - TIP: Pop some cran­berry and ap­ple sauce into ster­ilised jars to make lovely home­made Christ­mas gifts. Store in the fridge for up to 2 weeks.

1tbsp olive oil

2 shal­lots, finely chopped 500g cran­ber­ries 2 dessert ap­ples, peeled and roughly chopped 1 star anise

1 cin­na­mon stick 100ml red wine

150g caster sugar

1 heat the oil in a pan, add the shal­lots and cook gen­tly until soft.

2 add the cran­ber­ries, ap­ples, star anise, cin­na­mon, wine and sugar and stir to­gether.

3 Con­tinue to cook until the cran­ber­ries and ap­ples have soft­ened and the sauce has a jam-like con­sis­tency. leave the sauce to cool.
