Cranberry and apple sauce
Serves 6 Prep: 15 min Cook: 20 min
1tbsp olive oil
2 shallots, finely chopped 500g cranberries 2 dessert apples, peeled and roughly chopped 1 star anise
1 cinnamon stick 100ml red wine
150g caster sugar
1 heat the oil in a pan, add the shallots and cook gently until soft.
2 add the cranberries, apples, star anise, cinnamon, wine and sugar and stir together.
3 Continue to cook until the cranberries and apples have softened and the sauce has a jam-like consistency. leave the sauce to cool.
