Swap beef mince for… a combo of beef mince and lentils

Reducing the amount of meat you eat will save money and can be healthier too. You don’t have to cut meat out entirely – try using a mix of meat and lentils as a middle ground for meat lovers.

Beef and lentil chilli

Serves 6 prep: 10 min Cook: 45 min 400g beef mince

1tbsp olive oil

1 onion, chopped

1 stick celery, chopped 2tsp ground cumin

1tsp ground coriander 1tsp paprika

1tsp cayenne pepper 1tsp oregano

200g red lentils

400g tin chopped tomatoes 600ml beef stock

4 00g tin kidney beans, drained and rinsed dry-fry the beef mince in a non-stick pan until brown, then remove to a plate. add the olive oil to the pan and cook the onion and celery for 10 min. return the mince to the pan with the spices and herbs, stir well for 1 min, then add the lentils, tomatoes and beef stock. simmer for 30 min, then add the beans and simmer for another 15 min. serve with rice and sour cream. you can also top with mash and bake for a mexican-style cottage pie.
