Pawpaw sweet bread

Makes: 10 slices

1 cup plus 1/4 cup white sugar, divided use 1⁄ cup butter,

3 softened 2 eggs, beaten 2 cups mashed pawpaw, skin and seeds removed 1 1⁄ cups all-purpose

2 flour 1⁄ cup chopped

2 walnuts 1 rounded teaspoon baking soda 1⁄ teaspoon salt

2 1⁄ teaspoon baking

2 powder 1⁄ teaspoon

2 cinnamon

Heat oven to 350 degrees. Grease an 8-inch loaf pan with cooking spray.

In a bowl, mix together 1 cup of sugar with butter, beating until smooth. Add eggs and pawpaw and mix well to combine. Stir in flour and fold in walnuts.

Add baking soda, baking powder and salt and mix well until batter is smooth. Pour batter into baking pan.

In a small bowl, combine 1/4 cup sugar with 1/2 teaspoon of cinnamon and mix with a fork. Scatter sugar and cinnamon mixture across top of batter.

Bake loaf for 1 hour, 20 minutes or until a knife inserted in center comes out clean. Cool before slicing.
