Orange & smoked mackerel salad
SERVES 4 PREP 15min
300g (11oz) smoked mackerel 2 oranges
1 large courgette, cut into ribbons with a peeler
100g bag watercress
40g (1½oz) flaked almonds
FOR THE DRESSING
1tsp wholegrain mustard
1tsp honey or sugar
2tbsp white wine vinegar 4tbsp extra virgin olive oil
1 Peel the skin off the mackerel and discard. Flake the mackerel into a large serving bowl. Slice the peel and pith off the oranges, cut horizontally (across segment) into slices, and then cut each slice in half to make two semicircles. Discard the pips. Add to the mackerel, together with the courgette ribbons, watercress and most of the flaked almonds.
2 In a small bowl, mix together the dressing ingredients with some seasoning. Drizzle over the salad and toss together lightly. Sprinkle over the rest of the almonds and serve with some crusty bread, if you like.
