Turkey burgers
Tasty and quick to prepare, these are sure to become a family favourite.
MAKES 8 PREP 15min COOK about 20min
• 1kg (2lb 3½oz) turkey mince
• ½ red onion, finely chopped
• 4cm (1½in) root ginger, peeled and grated
• 1 green chilli, deseeded and finely chopped
• 1tbsp wholegrain mustard
• 1 medium egg
• 50g (2oz) fresh white breadcrumbs
• Large handful of coriander, roughly chopped
• 2tbsp vegetable oil
• 8 burger buns, halved and toasted
• Lettuce and tomatoes, to serve 1 Put the first eight ingredients into a bowl. Season, then mix together, using your hands. Shape into eight patties.
2 Preheat the oven to 200°C (180°C fan) mark 6, or the barbecue until medium-hot. TO BARBECUE Brush burgers with oil and cook over a low heat for 15min, turning once, until cooked through.
TO OVEN COOK In a large, non-stick pan, heat the oil and gently brown the burgers on each side. Arrange on a non-stick baking tray and cook in the oven for 15min, or until cooked through.
3 Serve the burgers in toasted buns and place slices of lettuce and tomato in each one. PER SERVING: CALS 486; FAT 16g; SAT FAT 4g; CARBS 48g GET AHEAD Make to the end of step 1 up to 3hr in advance. Cover and chill until needed, then complete the recipe to serve.
