Elderflowers are at their perfumed peak right now, so pick some to make a simple cordial. In a large bowl, mix 10 large elderflower heads, 900g (2lb) white sugar, 2 sliced unwaxed lemons, 25g (1oz) tartaric acid and 2 litres (3½ pints) freshly boiled water. Stir to dissolve sugar, cover and leave for 24hr, stirring occasionally, then strain through muslin and decant into sterilised bottles.
