Coffee granita

Use your favourite coffee for this simple dessert. SERVES 6 PREP 15min, plus cooling and freezing

• 75g (3oz) caster sugar

• 500ml (17fl oz) hot, strong coffee

• 150ml (5fl oz) double cream

• 25g (1oz) icing sugar

• Cocoa powder, to dust

1 Put a roasting tin or shallow 1 litre (1¾ pint) container into the freezer. Dissolve the sugar in the hot coffee, then set it aside to cool to room temperatur­e.

2 Pour the coffee mixture into the chilled tray/container and freeze for 30min. Break up the ice crystals around the edges and mix into the liquid centre. Repeat this process every 30min (about twice more) until the entire mixture has frozen into large granules. Transfer the granita to an air-tight container and freeze until ready to serve.

3 To serve, whip the cream and icing sugar together to soft peaks. Divide the granita between 6 glasses. Top each with the whipped cream and a dusting of cocoa powder.
