Available fresh right now, or in a jar for convenienc­e, one of the most accessible ways to eat artichokes is as a flavoursom­e dip…

● 150g artichoke hearts (you can use a jar of hearts preserved in oil, for convenienc­e – just drain off the excess oil first)

● 1 clove garlic

● Handful fresh basil

● 2 tbsp Greek-style plain yoghurt (or any alternativ­e thick vegan yoghurt)

● 1 tbsp olive oil

● 2 tsp lemon juice

Place all the ingredient­s in a bowl or a food processor and blend together as desired for a smooth or chunky dip. Enjoy with salads, pasta or crudites.
