This pizza dough is unique to Reading

READING is famous for its beer, bulbs and biscuits … and next week we can add pizza dough to that list as new restaurant Zia Lucia opens in the town centre.

Its doors will open on Wednesday, April 3, in St Mary’s Butts.

For the first week of trading, Zia Lucia will offer half-price pizza for people dining in.

On the menu is a new Readingexc­lusive olive dough. Zia Lucia’s limited edition offering is unique to the town, and uses a 48-hour slowfermen­ted dough.

Its other bases are a traditiona­l white flour dough, or wholemeal, gluten free, or vegetable charcoal black base, which won the UK National Pizza Award.

Reading is the first restaurant to open outside of London, and is part of Zia Lucia’s plans to open four additional sites this year.

Zia Lucia co-founder, Claudio Vescovo said of the Reading exclusive: “We are really excited to be celebratin­g our first opening in Reading with our olive dough.

“It is a recipe we have always wanted to introduce to the Zia Lucia family as a special, and it has taken a long time for our chefs to perfect it.

“It has a great olive taste, and visually, you can see the olive spots in the texture of the dough.”

He added: “We love to make not only great tasting doughs, but doughs that are visually temping too.

“It will join the likes of our black vegetable charcoal dough on the Reading menu. Our roots are in the traditiona­l baking traditions of pizza, but our vision is to continuall­y innovate on the different doughs we can offer our customers.”
