‘It doesn’t take long to make more than one sweet dish and it feels so generous,’ adds Bhogal. Add fruit to a shop-bought puff pastry case for an instant tart, then make a meringue roulade. ‘Bake meringue in a thin sheet, then roll up in greaseproo­f paper before it cools. Store for up to two days in an airtight container. When ready to serve, unroll, spread with whipped cream and chopped fruit, roll back up and sprinkle with pistachios. Done.’
