BAKEWELL BIRCHER

The combinatio­n of oats and cherries supports the production of melatonin, which is important for regulating the sleep-wake cycles.

SERVES 1

COOKING TIME 20 minutes

● 2tbsp flaked almonds

● 50g oats (ideally sprouted)

● 15g frozen unsweetene­d cherries

● ½tbsp almond butter

● ½tsp almond extract

● 75ml unsweetene­d almond milk (or milk of your choice), plus extra if needed

1 Preheat the oven to 180ºc, mark 4. Line a baking tray with baking parchment. Spread the flaked almonds on the baking tray and bake for 20min. Leave to cool, then store in an airtight container. 2 Prepare the bircher the night before you want to eat it. Mix all of the ingredient­s (except the almonds) in a bowl. Cover and leave in the fridge overnight.

3 In the morning, remove from the fridge and leave for 10min to come to room temperatur­e.

If it has set too thick, you may want to add more milk. Top with the flaked almonds.
