Gizzi Erskine serves up meat-free alternatives to some recipe favourites, as MARION McMULLEN discovers
RESTAURATEUR and food writer Gizzi Erskine has been vocal about sustainable eating since launching her cookbook Restore: A Modern Guide To Sustainable Eating during the pandemic.
Here she shares recipes inspired by her travels using meat alternative Eatplanted, including Thai Mock “Crispy Duck” and watermelon salad.
“The best pulled meat of them all is crispy duck and I got the flavour and texture from hoisin sauce, miso, soy, 5-spice and the texture from a quick braise and then a super hard and fast deep fry,” says Gizzi.
“It’s an absolutely perfect contrast against the fresh watermelon salad.”
