Gizzi Erskine serves up meat-free alternativ­es to some recipe favourites, as MARION McMULLEN discovers

RESTAURATE­UR and food writer Gizzi Erskine has been vocal about sustainabl­e eating since launching her cookbook Restore: A Modern Guide To Sustainabl­e Eating during the pandemic.

Here she shares recipes inspired by her travels using meat alternativ­e Eatplanted, including Thai Mock “Crispy Duck” and watermelon salad.

“The best pulled meat of them all is crispy duck and I got the flavour and texture from hoisin sauce, miso, soy, 5-spice and the texture from a quick braise and then a super hard and fast deep fry,” says Gizzi.

“It’s an absolutely perfect contrast against the fresh watermelon salad.”
