Peter

Nose: Delicate vanilla custard, and ripe banana. The presence of the oak takes a while to reveal itself.

Palate: Creamy custard onto the palate, thick and oily. Unripe banana notes run through, leading nicely to the finish.

Finish: Kind of like biting into green banana skin, dry and tannic. Peppery notes that fade into a short-ish finish.

Comments: Seems young, but it’s time in oak has been well spent, developing well and retaining a nice balance.

Sam

Nose: Very quiet. Tropical fruits and some freshly baked dough.

Palate: A little bit bolder on the palate than the nose. Only just. Vanilla flavoured Danish pastries, banana and oak. A little of the distillate present in there too.

Finish: Lasting with the banana note and something herbal. A spiciness from the oak tries to add balance to it.

Comments: Overall pretty quiet. Shows the variety of flavour that a rum can have.
