Nose: Oh, this is complex! Creamy banana custard with lashings of vanilla. Ripe peach, Victoria plum and caramel biscuit. A gentle salinity and a ‘green’ note, like broccoli.

Palate: Sweet, gently honeyed notes and a bowl of gently poached crisp white summer fruits.

Finish: It builds with an almost fiery ginger warmth, before easing down to reveal a gentle vegetal note.

Comments: The rum as distilled is very characterf­ul. A remarkably interestin­g tot.

Nose: With aromas of toasted sugar and a light grassiness, this is inviting and engaging.

Palate: Some salinity is mixed with notes of caramel and toffee, before more grassiness and esters from the cane come through. A bold and flavoursom­e rum.

Finish: A prickle of heat, but this would not be a problem if it was mixed – and it has the strength of character to stand up well to mixing.

Comments: A rum with brilliant intensity; a showcase for rum that can be made in the UK.
