Nose: Hubba-Bubba chewing gum, confected sweet black cherry, and a little sour cherry too. Freshly cut green pepper – almost an agave new-make spirit dimension.

Palate: Sweet caramel, vanilla custard, brown sugar, and sultanas.

Finish: The vanilla custard continues. Drying out into an astringent, warm finish, with a spicy tickle at the end.

Comments: The intriguing combinatio­n of casks has allowed the creation of a tasty, fairly interestin­g rum.

Nose: Gentle, subtle, and nuanced, with aromas of toasted brown sugar and a hint of chamomile grassiness.

Palate: Crisp wood notes in the form of dry vanilla and a soft sweetness, alongside richer notes of ripe red fruit. A lovely balance between the rum’s character and the wood.

Finish: A dry finish with interplayi­ng hints of sweetness and black pepper.

Comments: A nicely finessed and balanced spirit. It would make a beautiful Rum Sidecar.
