Some processed foods better than others

Runners often steer clear of processed foods, as they can be calorie-dense and high in sugar, salt and fats. But processing techniques also contribute to the availabili­ty of healthy, nutrient-dense and affordable foods. Take tofu, which is the product of soaking, mashing and, yes, processing soybeans. Vitamin E, that promoter of heart health, is also used as a preservati­ve to extend the shelf life of processed foods. Not all bad, then, but that’s not an excuse to tear open that packet of biscuits.
