Not all processed meat carries the same cancer risk. In 2015, the World Health Organizati­on classified all processed meat as carcinogen­ic, but new research3 suggests it’s only processed meats with nitrites, such as chorizo and frankfurte­rs, that are linked with colorectal cancer. Sodium nitrite is used by some food producers to cure processed meat, to enhance colour, or as a preservati­ve to increase shelf life. British and Irish sausages, as well as some newer varieties of ham and bacon, are free from nitrites. Nitrite-free chorizo is also available…
