Not all processed meat carries the same cancer risk. In 2015, the World Health Organization classified all processed meat as carcinogenic, but new research3 suggests it’s only processed meats with nitrites, such as chorizo and frankfurters, that are linked with colorectal cancer. Sodium nitrite is used by some food producers to cure processed meat, to enhance colour, or as a preservative to increase shelf life.
