How to make cauliflowe­r the star of the show

Cauliflowe­r is often perceived as boring, but this versatile vegetable is worth your attention

This version of cauliflowe­r cheese has a hefty dose of vitamin K, which works with calcium to build strong bones. 680kcals / 64g carbs / 36g protein / 31g fat / Serves 4

50g butter; 50g flour; 1L milk; 500g short macaroni, cooked; 200g grana padano cheese, grated; 1 tsp ground nutmeg;

5 kale leaves, washed and shredded; 8 cauliflowe­r florets, blanched; salt and pepper

1 / Heat the oven to 200C. Make a béchamel sauce. In a saucepan, melt the butter on a low heat, then stir in the flour and cook for a few mins, stirring nonstop until the flour has been absorbed. 2 / Pour in the milk gradually, whisking as you go. Cook for 5-10 mins, until mixture has thickened. Season to taste and let it cool. 3 / Pour the béchamel, macaroni and other ingredient­s into a bowl (keep aside 50g of the cheese) mix well. Use a wooden spoon to pile it into a baking dish and level out the mixture. Sprinkle over the rest of the grana padano. 4 / Bake in the oven for 30-35 mins, until golden brown. Done.
