Ingredients
FOR THE BASE
50g/2oz butter 75g/2½oz oatcakes, finely crushed 50g/2oz cream crackers
1 tbsp cocoa 2 tbsp salted peanuts, very finely chopped
FOR THE TOPPING
2 small ripe bananas
juice 1 lemon
2 x 250g tubs ricotta
200g Greek yogurt
4 large eggs
½ tsp vanilla extract
2 tbsp cornflour 200ml/7fl oz double cream
