DESSERTS made with vegetables, such as beetroot brownies or courgette cake, are not only trendy, but also offer a way to increase daily veg intake.

Make sure you use enough veg to count towards your five a day: 400 g of beetroot in a recipe for ten brownies means each will provide a half-portion of your five a day. To reduce the sugar used, try sweet veg such as cooked sweet potato or carrot. Carrots can replace up to 25 per cent of the sugar.
