3 WAYS WITH Red cabbage

1. Make a seasonal side dish of braised red cabbage by simmering a finely chopped red cabbage with 3 tbsp white wine vinegar, 2-3 tbsp (according to taste) brown sugar, the juice of a lemon, a chopped, cored cooking apple, a knob of butter and a handful of raisins or sultanas. Simmer for 1-2 hours, depending on how soft you want it, adding extra liquid if necessary. 2. For a crunchy red cabbage slaw, mix with diced red onion and grated carrots before tossing with light mayonnaise. 3. Bring a Chinese twist to braised red cabbage by cooking with red chilli, root ginger, star anise, garlic, wine vinegar, sugar and soy sauce. Finish with toasted sesame seeds.
