Pork steaks in creamy mustard sauce

SERVES 2

½ tbsp olive oil 2 boneless pork steaks 2 tsp wholegrain or Dijon mustard 2 tbsp crème fraiche handful of chopped parsley

• CALS 290 • PROTEIN 25g • FAT 20g• FIBRE 0 • CARBS 2g

FRY the pork in the oil for 15-20 mins then allow to cool briefly before adding the mustard and crème fraiche, stirring them into the juices. Season and scatter the parsley over. Serve with 2 tbs quinoa or bulgur wheat and green vegetables.
