VIETNAMESE HOT DOGS Serves: 2

1. Bring 2tbsp fish sauce, 2tbsp rice vinegar, 1tbsp caster sugar and 50ml water to boil.

2. Off heat, add 2 sliced garlic cloves; 1 deseeded, sliced red chilli; juice of 1 lime; and 2 julienned carrots.

3. Grill hot dogs for 8 mins; put in buns.

4. Put 12 cucumber slices, carrot mix, mint and coriander leaves in buns.

5. Serve with chilli sauce.

FULL ENGLISH FRITTATA Serves: 2

1. Wrap 4 sausages in streaky bacon.

2. In a 24cm dish, brush sausages and 4 portobelli­ni mushrooms in 2 tsp oil. Bake for 15 mins (190c/gas 5).

3. Remove from oven, reduce to 180c/gas 4. Whisk 6 eggs with 50ml semi-skimmed milk. Pour into dish.

4. Add 1 halved tomato. Bake for 30 mins until egg is set.
