THE Italian chef is on the island of Elba — famous for being home to the exiled Napoleon in 1814, it is also known in Italy for its wonderful honey. Elba was once an important source of iron ore, too, and Gino visits one of the disused mines before cooking up a honey chicken dish and an easy risotto.
