USING a low heat and shorter cooking time can help preserve nutrients and reduce the release of toxins called advanced glycation end products (AGEs) formed as a result of a reaction between sugars and proteins or fats, says neurologis­t Dr Dale Bresden, in his book The End Of Alzheimer’s. High levels of AGEs have been linked to diabetes and other chronic diseases.
