JERK is a style of Caribbean cooking that involves marinating meat in a spicy ‘jerk’ seasoning mix.

It originated in Jamaica, where traditiona­lly pork or chicken is coated in the rub before cooking.

The term also refers to the flavour of the distinctiv­e spice mix itself, primarily made from allspice and Scotch bonnet peppers.

However neither of these two key flavours are listed on the ingredient­s list for Mr Oliver’s product, pictured.
