SCOT­TISH chefs don’t come bet­ter than An­drew Fair­lie. Run­ning the only two Miche­lin­starred eatery in the coun­try, he is known for his ex­quis­ite palate, abil­ity to pair in­gre­di­ents and a true de­vo­tion to fresh, lo­cal pro­duce.

All that aside, he’s a gen­uinely nice bloke, a man who runs a kitchen where he shakes each mem­ber of staff’s hand when they ar­rive, be­fore they all sit down to eat to­gether. Gor­don Ram­say he most def­i­nitely ain’t.

Fair­lie’s an­nounce­ment this week that there is no more treat­ment avail­able for the brain tu­mour he has had since 2005, has sent shock­waves through­out the food world and be­yond.

He says it is now about ‘mak­ing ev­ery day gor­geous’. He mar­ried Kate, his long-term part­ner, on Wed­nes­day.

I wish them as many gor­geous days as pos­si­ble.
