TODAY’S RECIPE: Microwave banana pudding
A HIT with all the family. Serves: 4-6.
Ingredients
100g butter, softened, plus extra for greasing 2 ripe bananas 100g light muscovado sugar 100g self-raising flour 2 tsp ground cinnamon 2 eggs
2 tbsp milk
To serve: Icing sugar, toffee sauce and ice cream
Method
1. PUT butter in a one-litre baking dish and microwave on high for 30 seconds to a minute until melted. Add 1½ bananas, mash into melted butter, then add sugar, flour, cinnamon, eggs and milk. Mix together well.
2. SLICE remaining half banana over top, then return to microwave and cook on high for eight minutes until cooked through and risen. Serve warm, dusted with icing sugar and, if you like, with a drizzle of toffee sauce and a scoop of ice cream.
