WATERMELON SORBET
MAKES 4
1. Prepare a one-litre ice cream tub or Tupperware container by lining it with cling film, ensuring there is enough to fold over the top.
2. Put the watermelon in a food processor and pulse until smooth. If there are pips in your watermelon, you may want to sieve the mixture.
3. Add the syrup, followed by the lime juice, and pulse again until smooth.
4. Decant the sorbet into the container and put it in the freezer for an hour. Take it out, stir it with a fork and return to the freezer for another hour. Repeat this step twice more. It will stop ice crystals forming.
5. Remove from the freezer ten minutes before serving. It will keep for a month.
