TODAY’S RECIPE: Fondant potatoes

DELICIOUS with a roast. Serves: 6

Ingredient­s

6 medium Maris Piper potatoes, peeled

1 tbsp olive oil

200g unsalted butter, cubed

4 large garlic cloves, bashed

2 sprigs rosemary

2 sprigs thyme 200 ml chicken or vegetable stock

Method

1 Slice ends off potatoes so they lie flat. Heat oil in a pan over medium heat. Fry potatoes cut-side down for five minutes on each side until deep golden brown.

2 Add butter to pan. Scatter garlic and herbs around potatoes and season well.

3 Pour stock around veg. Cover and simmer for 30 minutes until potatoes are tender.
